Chef Kev D’s Jumbo Shrimp w/ Tequila Lime Cocktail Sauce

2 lb Main Entrée P&D Shrimp
3 Tbsp Pickling Spice
2 c Silver Tequila
2/3 c Worcestershire Sauce
2 qt Ketchup
1 c Horseradish
Add pickling spice & 2 sliced lemons to boiling water. Add
2 lb Main Entrée Shrimp to boiling water and poach until firm. Strain shrimp and add to ice bath to chill.
For the Tequila Lime Cocktail Sauce:
Squeeze limes into hot sauté pan. Add Tequila to pan and let alcohol burn off (watch for flame). Set aside and let cool. Mix remaining ingredients separately and add Tequila Lime mixture. Salt and pepper to desired taste.
