Maple Bacon Bourbon Salmon

Maple Bacon Bourbon Salmon. It’s almost all of the best words in the English language in one recipe! This was submitted by a creative Main Entrée customer, and we think it’s definitely worth sharing. Enjoy!
2 (8 oz) Main Entrée Norwegian Salmon Fillets
4 slices bacon, cooked crispy
1/4 cup Bourbon
1/2 cup maple syrup
salt and pepper to taste
Cook bacon under broiler until crisp, turning when necessary. Drain and set aside. Preheat oven to 350º. Season salmon lightly with salt and pepper and place in a greased baking dish. Bake salmon for 25 minutes or until it reaches safe temperature.
While salmon is cooking, put Bourbon and maple syrup in a small sauce pan and bring to a low simmer. Allow to reduce by 2/3rds, stirring occasionally. It should take about 30 minutes and have the consistency of a thick syrup.
Cut your bacon into bite sized pieces.
Place salmon on dinner plates, top with bacon, and drizzle sauce over bacon and salmon.
Try serving with an oven roasted potato and a simple salad.
