South African lobster tails are one of the premier lobster tail species served around the world. South African lobster tails are in high demand due to the sweet, succulent meat contained in the brilliant red colored shell.
Main Entrée filets are cut from upper two-thirds USDA Choice tenderloin and patiently aged. The Main Entrée butchers hand-select each tenderloin according to its marbling, texture, and color. We exclusively use barrel cuts (super center-premium), the Main Entrée Filets are always “hand cut with integrity”.
